I realize that meal planning and cooking can feel cumbersome, but it doesn’t have to take on a life of its own. A few simple steps on the weekends can make your work/school week a little easier.
A few things I do to help:
- Plan a menu and grocery shop for the items we need – I plan our weekly menu over the weekend, and head to the store to make sure I have what I need. I post the menu so I know what I am cooking when, and the family knows what we are having. This definitely cures the “what are we having for dinner?” issue.
- Pull out meats from the freezer so they are ready to go – When the menu is planned, it makes it a heck of a lot easier to make sure meats are defrosted and ready to use when we get home. There is nothing worse on a busy weeknight than frozen solid chicken breasts, and a hungry family.
- Save experiments for the weekends – I love to try new things, but I make sure to save more complicated recipes for weekends. Weeknights are stressful enough with activities and homework. Don’t add stress by trying to whip up a complicated dish.
- Plan a leftover night for your busiest evening – We have some evenings that busier than others, and those are the nights that I throw in a leftover night. It’s quick, easy, and cleans out the fridge!
