I made this recipe last week to test it out before posting. I was a bit reticent to make it, but the stew was a huge hit in our house. We are eating less red meat, and this stew seemed like a great substitute for a traditional beef stew.
I followed the recipe exactly, and my only change in the future would be adding less olive oil at the end. Other than that, all the flavors worked, and came together into a filling stew fit for a family or hosting friends. Add a baguette and side salad, and you have an easy meal that is sure to please.
