Cooking fish can feel scary, and a bit unnerving, so I suggest starting with a more forgiving fish such as salmon.  Don’t get me wrong, salmon can go from done to over-done if you’re not careful, but its structure and fat protect the fish from overcooking as quickly as a lighter fish.
